Texas Caviar

We've been busy this week and I haven't even had a chance to get the camera out until tonight.  So...Harlon is MIA in this post.  But I love this stuff so much that I think it deserves a post of it's own. 
TEXAS CAVIAR
2 cans Blackeyed Peas rinsed and drained
1 small onion diced
2 jalepenos diced (seed and core them if you don't like it spicy)
2 cans petite diced tomatoes
1/2 yellow bell pepper diced
1/4 cup fresh cilantro chopped
6 Tbl. red wine vinegar
6 Tbl. olive oil
1/2 tsp. salt
1/2 tsp. black pepper
1/2 tsp. garlic powder
1 tsp. dried oregano
1 1/2 tsp. ground cumin
Mix, cover and refigerate for 2 hours (overnight is even better!)
Tortilla Chips for dipping

Some people (Jase) are scared of blackeyed peas.  Don't be!  They are just beans and are really yummy, I promise.  I am taking it to dinner at a friends house.  I cut the recipe in half since there will only be 2 of us eating it.  If you like salsa you will love this.
