This quick and easy dinner again from my new cookbook was delish!  I used less spinach than it called for because I'm not a fan.  Turned out I really liked it in this recipe.  Also, I did a shortcut and got a rotisserie chicken then shredded up the breast meat.  I did almost the whole thing with Harlon playing at my feet in the kitchen and he's a VERY busy boy!  Oh, click the title at the top to take you to Taste of Home for the recipe!
