Cinco de Mayo Dinner

One of our favorite ways to eat tacos....Carne Guisada!  It is not from scratch.  We LOVE LOVE LOVE the Fiesta brand spices.  They are made in San Antonio and now that we are living out of the state we order them from the company.  This one and their Uncle Chris' Steak Seasoning are our favorites so far.  This is so easy and so tasty! http://www.fiestaspices.com/
All you do is brown 2 lbs of stew meat or chunks of pork if you want.
 Once the meat is browned
Poor in 2 cups of water
Cover and simmer over low to medium low heat until the meat is tender.  I simmer for 2 hours.
After the meat is tender, mix up 5 Tbl of the seasoning with 3/4 cup water and poor into the meat.
Simmer it until it is thickened as much as you want about 15 minutes.  I take my spoon and kind of shred the meat.
Make some guac, pico, or whatever else you like and serve it on warm tortialls and ENJOY!
Sadly we didn't have all the ingredients for margaritas so we had a loaded beer instead.  Declicious tacos!
