I took a reccomendation from our friend Angela about a magazine and subscribed to Taste of Home Simple and Delicious. I have treid several recipies and all have been tasty, quick and pretty darn healthy. This one was called Quick Pizza Rolls but I swapped out the french rolls hollowed out to make a bowl for pizza crust.
The filling for the bowls or pizza is simple and yummy!
1lb ground beef (I used ground sirloin but turkey breast or chicken breats would work)
1/2 cup chopped green pepper
1/4 cup chopped onion
1 can (8oz.) tomato sauce
1 can (6 oz.) tomato paste
1/4 cup water
1 garlic clove minced
1tsp. sugar (I used brown sugar)
1 tsp. Italian Seasoning
1/2 tsp. salt
6 French rolls or 1 large pizza crust
3/4 cup shredded cheddar cheese
3/4 cup shredded mozzarella cheese (I didn't use near this much cheese)
Cook the meat, pepper, and onion over medium heat until done; drain.
Add the tomato sauce, paste, water, garlic, sugar, seasoning and salt.
Bring to a boil. Reduce heat; simmer, uncovered for 10 minutes or until heated through.
Cut 1/4 in. off top of each roll; set aside. Carefully hollow out bottom of roll, leaving 1/4 in. shell. Fill each roll with 1/2 cup meat mixture. Sprinkle with cheeses, relace bread tops.
Place needed number of sanwiches on a baking sheet. Bake at 350 for 10-15 minutes or until heated through. Wrap remaining sandwiches in foil; freeze for up to 3 months.
In my case I brushed my crust with olive oil, topped with meat mix and cheese and baked pizza according to crust instructions.
