Instead of staying home alone with Harlon on my anniversary I decided to make dinner and take it over to share with friends. I tried two new recipes from my Taste of Home Simple and Delicious magazine and they were both wonderful. I only took a picture of dessert and it was of course the best part!
We had pulled pork sandwiches with sweet potato fries with honey-lime dipping sauce for dinner and spiced pudding cake for dessert.
Barbecued Pork Sandwiches
1 boneless pork butt (3lbs)
1medium onion, chopped
1Tbl. butter
1 can (15 oz.) tomato puree
1/2 cup packed brown sugar
1/4 cup Worcestershire sauce
2 Tbl. lemon juice
1/2 tsp. salt

Place pork in crock pot seasoned with salt, pepper, garlic and onion powder. Cook on low for 8-10 hours then shred.
In a Dutch oven, saute onion in butter until tender. Stir in the tomato puree, brown sugar, Worcestershire sauce, lemon juice, and salt. Bring to a boil. Reduce heat; simmer uncovered for 30 minutes. Add the pork to sauce and heat through. Serve on toasted buns.
I used the Alexia brand of sweet potato fries and made the yummy dipping sauce to go with.
Honey-Lime Dipping Sauce
6 oz. container plain yogurt
1 Tbl. Mayo
1/2 Tbl. honey
1 Tbl. fresh lime juice
1/4 tsp cumin
1/8 tsp oregano
1 tsp parsley
1/2 tsp onion powder
1/2 tsp kosher salt
Combine all ingredients, mix well and chill in fridge for at least 30 min. before serving.
And then there was dessert! OH MY! This cake is heavenly served warm with whipped cream on top!
Spiced Pudding Cake
1/2 cup butter, softened
1/2 cup sugar
1/2 cup sugar
1 egg
1 cup molasses
2-1/2 cups flour
1-1/2 tsp baking soda
1-1/2 tsp ground cinnamon
1-1/4 tsp ground ginger
1/2 tsp ground allspice
1/4 tsp ground nutmeg
1/4 tsp salt
1 cup water
2/3 cup packed brown sugar
1-1/2 cups water
1/4 cup butter, cubed
Whipped cream
In a large bowl, cream butter and sugar until light and fluffy. Add egg, beat well. Beat in molasses. Combine the flour, baking soda, spices, and salt; add to the creamed mixture alternately with water, beating well after each addition.
Transfer to a 13x9 ungreased baking pan; sprinkle with brown sugar. In a microwave, heat water and butter until butter is melted; carefully pour mixture over batter
Bake at 350 for 35-40 minutes or until a toothpick inserted near the center comes out clean. Serve warm. Garnish with whipped cream.
