I just realized that I have food and feet in the same post. I hope you're not grossed out! Ha!
I had the best day on Wednesday. I was in need of some "take care of Jamie" time. So, Harlon and I ventured to the mall where I splurged on purple polish for my toes. It felt so good to paint them. I think it's the first time since I was pregnant with Harlon. Clearly it needed to be done. And I love the sassy purple color. It's called "What A Broad." Ha! And for a bonus there was a huge dinosaur display at the mall. Harlon was in awe. He was yelling "dine" and pointing excitedly the whole time. There was a little train ride through the display. I wasn't able to ride with him and I was afraid he is too little to go alone. He loved looking either way! Oh, I also enjoyed a Passion Tea Lemonade from Starbucks. Delicious! Try one if you haven't already.
Sometimes simple is just right for dinner. I cooked up some brown rice (we only use brown, it's so much more nutricious), then mixed it with a can of refried beans (I like Old El Paso). I put some of the mix on a flour tortilla with a little cheddar cheese, then rolled each one up. I poured some enchilada sauce (I like Old El Paso) in the bottom of a pan, put the burrito/enchilada creations in the pan, topped all with more enchilada sauce and more cheddar cheese. I then baked it on 350 until the cheese was bubbling.
They were yummy and Harlon chowed them.
